I hope you all had a good weekend. Mine was more or less pretty relaxed. I can’t complain when my biggest decision to be made was what to order at Starbucks. Which I MUST add, that I had my first drink in 12 days!! Yep, totally relapsed but it was totally worth it.
One thing that had me over the moon, was that my best friend and her family are in Paris for the week and she knows me so well that she sent me this picture on Saturday. I mean, Louis Vuitton in Paris? Does it get any more perfect?? #dreams #goals
I also started reading a new Lianne Moriarty book. She is quickly becoming my favorite author. I read What Alice Forgot on our honeymoon and have had The Husband’s Secret on my reading list for quite some time and finally got around to buy it. It’s SO, SO, SOOOOO good so far. Make sure you have enough time to read it all because you won’t be able to put it down.
Ryan and I got a new grill a couple weeks ago and we have been using almost every night. Except I’m getting sick of the same old chicken breasts on it. Any one have any good, summer recipes for the grill? I’d love to try something new!
Newmann’s Own Lite Balasamic Salad Dressing
Box of Farfelle noodles
Mini Mozzarella Balls (usually found in the specialty cheese section)
Basil (a fresh basil plant is best!)
Cherry Tomatoes cut in halves
Directions: Cook noodles and drain. Set inside fridge to cool. Cut your cherry tomatoes in half and set aside. Chop up a 1/4 cup of basil leaves and add to your tomatoes. Once your noodles are cool, mix in your tomatoes and basil mixture and your mozzarella cheese balls. Then add your salad dressing to the top. I usually only use half a bottle. Cover your bowl and give it a good shake to mix and coat all your ingredients. Let it cool in the fridge for at least an hour and enjoy (it’s even better if you let it sit overnight)! **You really want to make sure your noodles are cool before you add your mozzarella, you don’t want the cheese to start melting!*
